What size lime squeezer do I need for limes and lemons?
If you only squeeze limes, buy the small bowl, which is usually the one labelled for limes and sits around two and a half inches across. If lemons are in the mix, either buy the medium bowl and accept that limes will move around inside it, or buy a nested two-in-one press that carries a small insert inside the large bowl. Buying the large orange size for limes is the worst of the three options, because the fruit skids and the press bites the rind rather than crushing the flesh.
Is the coloured coating on an aluminium press safe?
The enamel used on food-grade citrus presses is there specifically to keep the acid away from bare aluminium, which would otherwise react and leave a dull film and a metallic edge on the juice. Intact, it is doing its job. Once it chips, the exposed metal is back in contact with the fruit, and that is the point at which most people replace the press.
